ClareCooks : Loaded Chicken & Baked Potato Casserole

Hello people! Lately I started a crazy addiction.. Trying out Pinterest recipes. They look so bloody easy to make so I thought, me being a sucker at cooking trying out the recipes. It's either a fail or a success.. But of course I will only post the successful ones. image Better start learning how to cook now before Lil Missy grows few months older and I have to learn how to cook solids and all suitable for her. image

Anyways. Less talk. Let's get to the cooking. Last night I found this.. The Loaded Chicken & Baked Potato Casserole. 



Here are the ingredients you need: 


1. Potato
2. Bacon
3. Chicken
4. Parmesan
5. Cheddar


Step 1.

Cut your bacon into small tiny bits.


Step 2.
Get chicken breasts if possible. Apparently AEON BIG in Tropicana City Mall don't sell chicken breasts, so.. I had to get chicken keel instead. image So if you are unlucky like me you would want to debone the chicken. Remove all the skin from the chicken. Again, either chicken breasts or chicken fillet would be great.


Step 3.

Cut them into cubes. Smaller pieces so that they are easier to eat.


Step 4.

Remove the Potato skin and cut them into cubes. If you purchase organic potatoes you could keep the skin for a crunchier feel. Once again, the supermarket I go to don't sell such things. *ugh*


Step 5.

Add a pinch of salt to your chicken.


Step 6.

Add some pepper too.


Step 7.

Use a small pan and pour in 1 tablespoon of Olive Oil.


Step 8.

Now add the chicken into the pan and mix well.


Step 9.

The add in the already cut potato and mix them as well.


Step 10.

Now add in the bacon.


Step 11.

Mix them all up together.


Step 12.

If you have an oven you can make a bigger pot / pan. I'm just using the air fryer so it could only fit this small pan. Now put in your pan into the air fryer.


Step 13.

Set the temperature to the highest and leave it for 15 minutes.


Step 14.

Take it out from the air fryer and give it a good toss. Put it back in the air fryer to bake for another 15 minutes.


Step 15.

Add Cheddar to your pan.


Step 16.

If you want more cheese add some parmesan too.


Step 17.

Put it back in the air fryer again for another 15 minutes.


And you are done!! Just look at that melted cheese.. image


The chicken was cooked perfectly. So were the potatoes nicely baked. And the melted cheese on top... Much needed comfort food indeed.
